When you have a late night craving for chocolate, or just need to whip up a simple chocolate dessert recipe for last-minute guests, this recipe is King.
I have tried it both ways, butter or oil. They taste similar and oil is easier to prepare, so it gets my vote.
Mix dry ingredients together in a bowl.
Add wet ingredients and mix with a spoon until all combined.
Pour into greased 1 cup ramekins.
Microwave on high for 3 minutes (expect some spillover)
The chocolate pudding below is a more dense and fudgey pudding. It is what happens when you put the wrong flour in a muffin recipe! Yes this recipe was originally a mistake. However the texture is so good that it deserves to be recipe in its own right!
It is lovely served either hot or cold, with cream, custard or sugarfree icecream. It keeps well in an airtight container for a few days.
Preheat oven to 170 degrees Celcius.
Sift dry ingredients into a bowl. Add the wet ingredients and stir until just combined.
Spoon mixture into a greased muffin tray. Makes 12 muffin-sized puddings.
Bake at 170 deg Celsius for 20 mins.
