Apples are a staple fruit in my house. However, even this classic sometimes goes out of fashion for a while when we have eaten too many of them. What to do with left-over apples? Make sugar free muffins, of course!
Preheat oven to 170 degrees Celcius.
Sift dry ingredients into a bowl. Add the wet ingredients and stir until just combined.
Spoon mixture into a greased mini muffin tray. Makes 24 mini muffins.
Bake at 170 deg Celsius for 15-17 mins.
I have a very fussy eater in my household. This little miss will spit the blueberries out of blueberry yoghurt! I was hesitant to try blueberry muffins because of this potential waste but finally did it this week. I have to admit that I was pleasantly surprised. She ate two of these muffins in a row, and didn't leave anything over. Hurray! I did mash the blueberries up quite a bit to help with her acceptance and it worked. By the way, the one that I got to eat was delicious. Only one left in the freezer now - most have been promptly devoured by the children.

In this recipe I used frozen raspberries harvested from my garden the previous summer. I'm sure fresh raspberries would be just as nice, and I plan to try them this coming summer!
